This no-knead bread idea swept the baking sites over a year ago. I’ve been meaning to try it, but I guess I’m just too set in my ways and like to knead bread. So last night I tried Zurie’s recipe with mixed results. It is extremely easy and almost almost no effort is involved. But this might be a case of getting out of it what you put into it. The bread is still cooling, but so far it is flat and chewy looking. Next time I will have to try it in a smaller pan, my ginormous Mario pan didn’t give the bread any sides to climb. For now it will be fine with scotch broth – but tomorrow maybe I’ll try my hand at croissants for Thanksgiving.
